Pickled Beets

Ontario beets are still available this time of year. Here's a simple recipe for pickled beets if you're running out of ideas for what to do with them!

This recipe makes enough for 12 pints.

Cook enough beets beets to fill 12 one-pint jars until soft. Peel and put in pint jars.

Heat: 2 cups cider vinegar

          2 ¾ cups water

          4 cups sugar (OR 2 cups xylitol and 1 tsp liquid stevia OR 2           cups honey)

          6 Tbsp salt

Bring to a boil and pour over beets in jars. Place in hot water bath for 10 minutes. Set on counter to cool. 

Be sure to follow all food safety protocols.
