Lion's Mane is a unique variety of mushroom thought to possibly have several health benefits including protection against dementia, anxiety, depression, ulcers, and heart disease. Best of all, it's delicious!
Pulled (no Pork) Lion's Mane Sandwich
1/4 lb Lion's Mane
1/2 cup BBQ sauce
1 Tbsp olive oil
2 Tbsp chopped green onions
1 tsp tapioca
1/2 chopped red bell pepper
Vegan pretzel bun or burger bun, Crispy onions or jalapeños Salt & pepper to taste
2 cups broccoli coleslaw mix
3 Tbsp mayo
1 tsp lemon juice
1 tsp red vinegar
1/2 tsp sugar, Salt & pepper to taste
Preheat oven to 370º F
Pull apart Lion's Mane into small pieces that resemble shredded meat.
Add Lion's Mane to a grill/sauté pan with a pinch of salt & pepper and cook on low for 10-15 minutes to release all of the water.
Line a baking dish with parchment paper and place the Lion's Mane evenly onto the paper.
Bake at 370º F until the pieces of mushroom begin to crisp (toss frequently to avoid burning).
Mix Sauce, red bell peppers, and green onions together in a bowl.
Stir the Lion's Mane into the sauce and put it back in the oven for another 10 minutes.
